Updated Pizza Post To Open Soon in Marilla



Marilla is about to get a pizza shop, just in time for football season.

Brownie’s Pizza Post, located at 12643 Williston Road, Marilla, has received final approval from the health department and is undergoing the finishing touches to the building so that the kitchen can open. The outside sign has been installed, the recipes are being finalized and owner Larry Kosinski is looking forward to offering people in Marilla and the surrounding areas an option to get pizza and other specialties a little closer to home. 

“People who live here either have to go to East Aurora or Alden,” Kosinski said. “This is a nice location.”

The name “Pizza Post” is tribute to the former “Giacomo’s Pizza Post,” which served people in this location from 1996 to 2016. Kosinski has a few recipes from this old pizzeria, and he plans on including a few ‘legacy’ items to his menu once it’s revealed.

Kosinski feels like this is just what the area needs.

“It has been missing from the town,” he said. “So many people stop by while I am working asking how it’s going.”

Brownie’s Pizza Post is located at the intersection of Williston and Three Rod roads. The building was built in the 1870s and used as a General Store until 1969. According to Marilla Town Historian Hubert Kutter, Kosinski is the 11th owner of the location. Over the years, it has also been a deli, an antiques store, a country store and an auto supply store.

Kosinski said that he has spent time over the summer testing different recipes. Aside from pizzas, he would like to offer foods like chicken fingers, pizza logs and taco logs, but unlike other places, his will be homemade rather than frozen. It will be more time consuming, but worth it. 

“I want to take the time to have more homemade foods rather than processed foods. This way I can control the quality of the foods being put out,” Kosinski said. “I am using all top shelf ingredients and trying to get away from processed, high sodium and high preservative foods. I also have a few weeks of training my employees on these practices and I have a friend who has been a chef for 30-years come in to assist with this.”

Along with honoring the former pizza spot in the name, the new pizzeria pays tribute to Kosinski’s late father, as his nickname was “Brownie.” Kosinski said that they used to always say that they would own a pizzeria together someday.  Kozinski’s father was a cook during the Korean War. 

“I have some of my dad’s recipes, as he loved to cook and was always coming up with some unique and delicious dishes,” Kosinski said. 

Kosinski bought the building in 2018 and began remodeling right away; floors were leveled, he tackled updating the electric and he started to look into kitchen equipment. In March 2019, Kosinskii was diagnosed with colorectal cancer. This put his project on the back burner while he concentrated on his health. He got clearance in 2020 to start working again, which he did, shortly before the pandemic hit. Kosinski decided to use this time to focus on getting things right and not rushing into opening. Like many other businesses, he installed plexiglass and it’s “pandemic ready.” He’s just working on a few finishing touches.

“I expect to be open mid to late September,” Kosinski said.

Brownie’s Pizza Post, at the intersection of Williston and Three Rod roads, is planning on opening up for business in September.
